Florida Ratatouille

This Florida ratatouille has okra instead of eggplant.  Just like traditional ratatouille, it can be served hot or cold.  It’s a perfect summertime veggie dish.

Okra and Corn Fritters

Fried okra is a rare treat for me.  I won’t get my fix at a restaurants because it’s always disappointing and often sickening.  And forget some shake-and-bake coating pretending to taste fried.  It doesn’t work for okra.  Trust me, I have tried.

Pickled Okra with Peppers

People say okra is prickly.  It’s slimy.  It’s tough.  I think those giant pods from the grocery store are responsible for okra’s bad reputation.  Smaller home-grown pods are only slightly fuzzy, much less slimy, and perfectly tender.
